Corvallis’ next Science Pub on Monday, Nov. 12, “The Science of Flavor,” explores the mechanisms behind taste from nose to tongue. Juyun Lim of the Oregon State University Department of Food Science will discuss the role of the olfactory system and other factors that influence preferences for certain foods. Learn how texture, smell, chemical irritation, temperature, and other stimuli come together to create different sensations of sweet, spicy, and other flavors in the brain. Delve into the unique sensation of Old World Deli’s fabulous brownies and other treats at the same time to perfect the evening.
